Spicy BBQ Avocado Pita Sandwich


I bought a bag of soy curls a LONG time ago and had them chill out in my cupboard for awhile while I decided what the heck to do with them.  The instructions to prepare are so easy.  I'm a pretty darn good cook.  Yet something about them made me really nervous.  Don't know what my deal was.

I finally got over that when I saw that Barb at That Was Vegan? made a spin on one of my recipes using soy curls!  I was so happy!  And finally grabbed my soy curls and tested them out.

Now I'm a soy curl convert.  They are so delicious and ridiculously easy to prepare.  I do wish they were easier to find though - I bought these on Amazon.  Anybody got a better idea?

For this recipe, I spiced up some BBQ sauce, coated the soy curls in that deliciousness, and stuffed a hot pile of soy curls into a delicious pita with loads of avocado and baby kale. 



serves 1
3/4 C soy curls
1/3 C BBQ sauce
hot sauce to taste
1/2 avocado
big handful baby kale (or any other green)
2 T thinly sliced red onion
1 whole wheat pita pocket

Soak soy curls in a couple cups of hot water for 10 minutes to rehydrate.  Then wring out the soy curls to dry them out.  Heat BBQ sauce in the microwave for about 30 seconds, then toss with the soy curls. 



You can toast or microwave your pita a bit if you want it warm - just don't toast it too long or it will just crack when you dig in, and this becomes one messsssy meal.

Stuff your pita pockets with everything!

Looks delicious! I've been seeing a lot of recipes with these soy curls lately. Definitely need to try them out, especially if they're easy to make! I found a list of where to buy them - http://www.butlerfoods.com/wheretobuy/wheretobuy.html . I'm in Ontario; will still have to buy them online unfortunately. I found them for a really good price at www.fakemeats.com!

Wow that looks so easy! I have seen soy curls in my local asian market. Really cheap too.

Oooh, you two are very helpful! That fakemeats website is WAY cheaper than I paid, and I'll definitely watch out next time I go to the Asian market . . . which should be soon. Thanks for the help!

If you go to the manufacturer's website, you might be able to find them locally. Here (metro Atlanta), there is a health food store inside a christian book store that carries them.
The first place I had them in NJ just closed their store front. :(
