Sun Dried Tomato Pesto Pizza w/ Mushrooms & Caramelized Onions

Happy Tuesday, folks!  How is your week going?

My last couple weeks at my new job are flying by faster than usual.  I think that’s a good thing.  But I also have no idea where all the time is going!

But more of it should go to food, probably.  Food time.  For sure.


Sometimes I get a serious craving for sun dried tomato pesto.  I don’t know what it is.  Obviously I love pesto.  And sun dried tomatoes.  I AM human, after all. 

But I have no idea what it is that makes me feel a desperate NEED to make a batch of sun dried tomato pesto.  Whatever it is, it struck again earlier this week.  So last night I made a batch of pesto and used half of it on this awesome delicious pizza.

The other half will probably be spread on some bread.  That’s all I need in life. 

yields 8 slices
1 whole wheat pizza dough
1 T Earth Balance margarine
1 small white onion, chopped
1/4 C sun dried tomatoes
1/2 C basil, well packed
1 cloves garlic
2 t nutritional yeast
1 T avocado or olive oil
pinch salt & pepper
3/4 C vegan mozzarella (I tried out Trader Joe’s brand tonight, it really melted well!)
1/2 C cremini mushrooms, sliced
2 T sliced olives
extra basil for garnish

Let your pizza dough sit out to warm up a bit while you preheat your oven to 400 degrees. 

In a large nonstick skillet over low heat, melt the margarine and add the onion and allow to slowly caramelize.  

In a food processor, combine sun dried tomatoes, basil, garlic, nutritional yeast, oil, and salt and pepper.  

Stretch your pizza dough out and put it on an oil-sprayed cooking sheet.  Then spread the pesto mixture on top, add your toppings and the cheese (except the extra basil, leave that fresh.)  Bake your pizza for about 15-20 minutes until the cheese is melted and the crust is golden brown.


You could double all the pesto ingredients and make a double batch …. mmmmm!

Also, am I the only one who thinks of Friends when eating sun-dried tomatoes?  Chandler’s right, what’s wrong with sundried tomatoes?  I don’t understand why they’re mocked.  Sadness.
