Thai Pizza Veggie Burgers

 
What does my weird title mean?   Remember CPK’s Thai Chicken Pizas?  Yeah.  Now presenting those flavors in the form of a vegan burger.
 
Oh. my. gosh.
 
That’s really all I have to say about this.  
 
patties:  
yields 6 patties
2 C walnuts, soaked in water for at least 2 hours
1/2 C sesame seeds
4 oz tofu
2 T plum sauce
2 cloves garlic
1 T ginger
3 scallions
1 large carrot, shredded
1 t hot sauce
2 t sesame oil
 
Preheat oven to 350 degrees.
 
 
Combine all ingredients in a food processor (I stirred in the sesame seeds whole to look pretty).  Form into patties and place on a well-oiled baking sheet.
 
Important note here: do NOT flip these burgers.  I flipped two way prematurely, and they crumbled into bits.  I flipped two more at a much more reasonable time and they broke in two big pieces.  I thought I’d have to redo the whole recipe if I couldn’t get these to work!  Fortunately, the last two turned out perfectly – I didn’t flip them at all during the cooking process, and let them sit for a good 10 minutes after I took them out of the oven.  Yaaay, they stayed together!  Success 🙂
 
 
By the way, the broken bits are serving a great purpose as salad toppers – I highly recommend you use some of these patties for that!  TJ’s Spicy Peanut Vinaigrette and the same kind of toppings listed below make for an awesome salad.  

 
toppings:
Pile high all the goodies you might find on a Thai pizza!  Whatever you like.  I chose lettuce, red bell pepper, bean sprouts, and caramelized onions.  Plus another nice big dollop of plum sauce.  I’m thinking some pineapple, peanuts or peanut sauce, cucumbers, and more fresh shredded carrot would have been good too.  But I had to exercise a little restraint so I could still manage to eat this burger.  With all the toppings and a bun, half a burger was plenty of food. I’m not usually one to forgo a bun, but this is a great candidate for a big ol’ leaf of lettuce instead of a bun.
 
 
Gotta say, I’m pretty proud of myself.  YUM.
